Thanksgiving is a time for family, gratitude, and eating a ridiculously large amount of food. There’s the turkey, mashed potatoes, and stuffing, but the dish that’s hardest to resist is the pie. To make your Thanksgiving extra special, try making this rich pumpkin pie that’s guaranteed to win over all of your guests.

Here are the ingredients you’ll need for the pie filling:

  • A fifteen ounce can of pumpkin purée
  • 3 eggs
  • 1 ¼ cups of light brown sugar
  • 1 tablespoon of cornstarch
  • 1 ½ teaspoons of ground cinnamon
  • ½ teaspoon of ground ginger
  • ¼ teaspoon of freshly grated nutmeg
  • ⅛ teaspoon of ground cloves
  • 1 cup of heavy cream
  • ¼ cup of milk

 

And the ingredients for the pie crust:

  • 2 ½ cups of all-purpose flour
  • 1 teaspoon of salt
  • 1 tablespoon of sugar
  • 2 sticks of cold, unsalted butter, diced into ½ inch cubes
  • 1 cup of finely chopped toasted walnuts
  • 6-8 tablespoons of ice water
  • 1 lighted beaten egg

 

Directions:

  1. Add the flour, salt, and sugar into a food processor, pulsing to combine
  2. Add the butter, pulsing to combine
  3. Add the walnuts, pulsing only a few times 
  4. Add the ice water and pulse until mixture resembles wet sand
  5. Turn your dough out onto your work surface, dividing in half and shaping them into disks
  6. Wrap the dough in plastic wrap and let sit for between 2 hours and 2 days in the fridge
  7. Preheat oven to 375 ̊ F
  8. In the meantime, start on the filling by whisking the pumpkin purée, eggs, and brown sugar together in a large bowl
  9. Add in the cornstarch, salt, cinnamon, ginger, nutmeg, cloves, cream, and milk until the mixture is fully combined and thick
  10. Take out one of the disks onto a floured surface and roll out to 12 inches
  11. Place the dough into the freezer for 30 minutes
  12. Take out the dough and press into a 9-inch pan, leaving about an inch overhang
  13. Add pie weights into the pan after lining with parchment paper
  14. Par bake the crust for 10 minutes
  15. Take the crust out of the oven and pour the filling into the dish
  16. Place the pie back into the oven, baking for an additional 50-60 minutes
  17. Let the pie cool completely before cutting into the pie
  18. It’s time to enjoy your pie!
